Hearty Beef Vegetable Soup (Printable)

# What You'll Need:

01 - 1 lb beef stew meat, cut into ¾-inch cubes

02 - 2 medium carrots, peeled and sliced
03 - 2 celery stalks, diced
04 - 1 large onion, chopped
05 - 2 medium potatoes, peeled and diced
06 - 2 cloves garlic, minced
07 - 1 cup green beans, trimmed and cut into bite-sized pieces
08 - 1 cup frozen or fresh peas

09 - 6 cups beef broth (low sodium preferred)
10 - 14 oz canned diced tomatoes with juice
11 - 2 tablespoons tomato paste
12 - 1 tablespoon vegetable oil

→ Seasonings & Herbs

13 - 1 teaspoon dried thyme
14 - 1 teaspoon dried oregano
15 - 2 bay leaves
16 - ½ teaspoon black pepper
17 - Salt, to taste
18 - 2 tablespoons fresh parsley, chopped (for garnish)

# How To Make It:

01 - Heat the vegetable oil in a large soup pot over medium-high heat. Add beef cubes and brown on all sides for about 5 minutes.
02 - Add chopped onion and minced garlic to the pot; sauté for 2–3 minutes until softened.
03 - Stir in sliced carrots, diced celery, diced potatoes, and green beans. Cook for 3 minutes, stirring occasionally.
04 - Add tomato paste and cook for 1 minute, stirring to coat the meat and vegetables evenly.
05 - Pour in beef broth and diced tomatoes with juice. Add dried thyme, dried oregano, bay leaves, black pepper, and salt to taste.
06 - Bring to a boil, then reduce heat to low. Cover and simmer for 60 minutes until beef is tender and vegetables are cooked through.
07 - Stir in peas and continue simmering uncovered for 10 minutes.
08 - Remove bay leaves. Adjust seasoning to taste, ladle into bowls, garnish with chopped parsley, and serve hot.
