01 - In a mixing bowl, combine olive oil, lemon juice and zest, minced garlic, thyme, rosemary, parsley, salt, and pepper. Whisk thoroughly until evenly blended.
02 - Arrange chicken breasts in a large resealable bag or a shallow dish. Pour marinade over the chicken, ensuring each piece is fully coated. Seal or cover and refrigerate for at least 20 minutes or up to 4 hours for enhanced flavor.
03 - Preheat oven to 400°F (200°C) or heat a grill pan over medium-high heat.
04 - Take chicken breasts out of marinade and allow any excess to drip off.
05 - For oven: Place chicken breasts in a single layer on a parchment-lined baking sheet. Bake for 20–25 minutes, or until internal temperature reaches 165°F (74°C). For grill pan: Grill chicken for 6–7 minutes per side until golden and thoroughly cooked.
06 - Let chicken rest for 5 minutes after cooking. Slice if desired, and garnish with lemon slices and extra fresh herbs. Serve hot.
