# How To Make It:

01 - Heat olive oil in a large soup pot over medium heat. Add onion, carrots, celery, and red bell pepper, stirring occasionally for 5 to 7 minutes until softened.
02 - Add minced garlic, ground cumin, dried thyme, and smoked paprika. Cook for 1 minute, stirring constantly until fragrant.
03 - Stir in potatoes, lentils, diced tomatoes with juice, vegetable broth, water, bay leaf, salt, and black pepper. Mix thoroughly to combine.
04 - Bring contents to a boil, then reduce heat to low. Cover and simmer for 30 to 35 minutes, or until lentils and vegetables are tender.
05 - Remove the bay leaf. Incorporate chopped spinach or kale and cook for 2 to 3 minutes until wilted. Taste and adjust seasoning as needed.
