# What You'll Need:

01 - 4 bone-in, skin-on chicken thighs (about 1.5 pounds)
02 - 1/2 teaspoon kosher salt
03 - 1/4 teaspoon freshly ground black pepper

→ Maple-Miso Glaze

04 - 3 tablespoons white miso paste
05 - 2 tablespoons pure maple syrup
06 - 1 1/2 tablespoons soy sauce
07 - 1 tablespoon rice vinegar
08 - 1 tablespoon sesame oil
09 - 2 garlic cloves, minced
10 - 1 teaspoon fresh ginger, grated

11 - 1 tablespoon toasted sesame seeds
12 - 2 scallions, thinly sliced

# How To Make It:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper or foil.
02 - Pat chicken thighs dry with paper towels and season both sides evenly with kosher salt and black pepper.
03 - In a small mixing bowl, combine white miso paste, maple syrup, soy sauce, rice vinegar, sesame oil, minced garlic, and grated fresh ginger. Whisk until the mixture is smooth and fully blended.
04 - Arrange chicken thighs, skin side up, on the prepared baking sheet. Generously brush half of the maple-miso glaze over the chicken.
05 - Roast the glazed chicken for 20 minutes in the oven.
06 - Remove baking sheet from the oven and brush the chicken with the remaining maple-miso glaze.
07 - Return to oven and roast for an additional 15 minutes, or until chicken is cooked through to an internal temperature of 165°F and skin is deeply caramelized.
08 - Let the chicken rest for 5 minutes. Before serving, sprinkle with toasted sesame seeds and top with thinly sliced scallions.
