12 - 2 tbsp finely chopped scallions
13 - 1/4 cup fresh pineapple, diced

# How To Make It:

02 - Pat salmon fillets dry with paper towels. Rub with olive oil and season both sides with salt and pepper. Place on the prepared baking sheet.
03 - In a small saucepan over medium heat, combine pineapple juice, soy sauce, honey, rice vinegar, garlic, and ginger. Bring to a simmer and cook for 3-4 minutes.
04 - Stir in the cornstarch mixture and cook for 1-2 more minutes until the glaze thickens. Remove from heat.
05 - Brush half of the glaze over the salmon fillets.
06 - Bake for 10-12 minutes, or until just cooked through and flaky.
07 - Remove from the oven and brush with the remaining glaze. Garnish with fresh cilantro, scallions, and pineapple if desired. Serve immediately.

# Tips from dashanddishes:

01 -
  • The glaze transforms basic salmon into something that feels fancy enough for guests but comes together in under 30 minutes
  • That sweet and tangy pineapple coating caramelizes beautifully while keeping the fish incredibly moist
02 -
  • Watch the glaze carefully in the last few minutes because the high sugar content can go from golden to burnt quickly
  • Letting the salmon rest for just 2 minutes after baking helps it retain those delicious juices
03 -
  • Patting the salmon completely dry before seasoning helps the glaze adhere better
  • Warm your glaze slightly if it thickens too much while brushing
