- Set a large cast iron skillet or griddle over medium-high heat until hot.
- Divide the ground beef into 8 equal balls, each about 2 ounces.
- Lay out each tortilla on the work surface and place one beef ball in the center. Press to flatten the beef so it covers most of the tortilla using your hand or a spatula.
- Once the skillet is hot, position a tortilla-meat assembly onto the skillet with the meat side facing down. Firmly press down with a flat spatula to flatten the patty and ensure it adheres to the tortilla. Season the exposed beef with salt and freshly ground black pepper.
- Cook for 2 to 3 minutes, allowing the beef to develop a deep crust and crispy edges.
- Flip the assembly so the tortilla is now on the skillet. Top the beef side with half a slice of cheddar cheese. Continue cooking for 1 minute to melt the cheese and toast the tortilla.
- Remove the finished taco from the skillet and continue with remaining assemblies until all are cooked.
- Layer each taco with shredded lettuce, sliced onion, tomato, pickles, and drizzle with burger sauce, ketchup, or mustard as preferred. Fold and serve while hot.
