01 - Slice each croissant horizontally. Optionally, toast the cut croissants in an oven or toaster for 2 to 3 minutes until slightly warm and crisp.
02 - Evenly spread softened goat cheese over the bottom half of each croissant.
03 - Arrange thin apple slices atop the goat cheese and drizzle each portion with 1 teaspoon honey.
04 - Sprinkle chopped walnuts or pecans over the apples and add a handful of arugula or baby spinach, if desired.
05 - Season with freshly ground black pepper to taste, then cap with the remaining croissant halves. Gently press and serve immediately.
