01 - Cut the peeled sweet potatoes into ¼-inch thick fries.
02 - Place the cut fries in cold water and soak for 30 minutes to remove excess starch. Drain and pat dry thoroughly with paper towels.
03 - Transfer fries to a large bowl and toss with olive oil. If using, sprinkle with cornstarch and toss until evenly coated.
04 - Add sea salt, smoked paprika, garlic powder, and black pepper to the fries and toss again to distribute evenly.
05 - Preheat the air fryer to 380°F for 3 minutes.
06 - Place the fries in a single layer inside the air fryer basket. Work in batches if necessary to avoid overcrowding.
07 - Cook fries for 16 to 18 minutes, shaking the basket halfway through cooking, until fries are golden, crisp, and cooked through.
08 - Optionally sprinkle with additional salt and serve immediately with preferred dipping sauce.
